Good Morning Friends!
I’m so excited that it’s finally Fall!! Weeee!!! Is it getting chilly where you live? Around here it finally got so cold that there was frost on the windshield of the car. I grinned from ear to ear. Little Cosmos has been staying warm in his heated house on the covered porch, but this morning even he shook off his fur and had breakfast inside the house (shh! no telling! hehe!).
So while the weather gets cold, it’s time to heat up the house with a bit of baking! Around here we have been singing all the classic Halloween songs including, “This is Halloween” non-stop, which means we had to watch the movie too. Sprawled on the couch we snuggled up and I was able to regress and enjoy this spooky, fun movie. I was texting Daddy C all about it. To top off the moment I baked Jack Skellington Cuppy-Cakes! I snapped a few pictures to show you how you, too, can slip into Little Space and enjoy this easy treat. Are you ready to bake up a batch of these fun cupcakes? Then, let’s dive in.
Foodie Fact: When buying pre-made icing, rainbow chip is the best tasting frosting. Does it look the best on Jack’s face? Well, no. Stark white looks the best. But taste-wise, rainbow chip is sublime so that’s why we went with it. π
Jack Skellington Cupcakes in 4 Easy Steps
Ingredients:
- 1 box chocolate cake mix
- 1 pack cupcake liners
- 3 eggs
- 1 cup of water
- 1/4 cup vegetable oil
- 1 tub rainbow chip frosting
- 1 tube black frosting gel
Instructions:Β
Step 1: In a mixing bowl combine the cake mix, eggs, water, and oil. Mix for a few minutes until the batter is nice and smooth. Begin pre-heating your oven to 350 degrees (F)/ 177 degrees (C)/ Gas Mark 4.
Step 2: Mix the batter until smooth.
Step 3: Ladle into your cupcake liners in a 12 count muffin tray and bake for 25 minutes. Then remove from oven and let cool completely.
Step 4: Frost with frosting and use the black gel to draw on Jack’s face. (Make those eyes REALLY big! hehe!). Eat and enjoy!!

Protip: Kitten makes THE best coffee ever, she uses Italian Sweet Creamer + Colombian coffee….mmmmmm β€ β€ β€
