Good Evening Friends,
As we wrap up the day I want to share with you an exciting collaboration that I’m doing with my husband, Captain Taliron Quinn, over on his blog called “Games and Grub”! We are both gamers, (so much so that we even met in a video game!), and so for the entire month of October we will be bringing you 31 dishes + 31 video games that every Little would love! Tonight’s dish to kick off this series is: Irish Stew!
It’s rustic. It’s comforting. It’s simple. But wow is it soothing on a cool night. So! Now that the weather is cooling down, give this hearty but easy stew recipe a try. Are you ready to get your Little hands busy in the kitchen? Then, let’s dive in!! ❤
Irish Stew in 4 Easy Steps
- 3 tbsp. olive oil for frying
- 2 lbs. boneless beef for stew meat
- 1 onion, diced
- 2 carrots, chopped
- 2 parsnips, chopped
- 3 potatoes, quartered
- 1 leek, chopped
- 1 bunch of chopped kale
- 8 cups water
- 1 tsp. dried rosemary
- 1 tsp. dried thyme
- 1 tsp. salt and black pepper
Step 1: In a large pot, drizzle olive oil and turn on the stove to medium high heat. Brown the beef for several minutes.
Step 2: Toss in all of your chopped vegetables.
Step 3: Cover everything with water. Bring to a boil, then reduce to a simmer for 1 hour and 30 minutes.
Step 4: Serve hot with a slice of hearty bread and dig in!
